Grecanico with Minella, Carricante, Insolia
Aromas of lime, lemon and white peach. The palate is dry with ripe citrus flavours, a lively acidity and a lasting finish.
This wine is made from organically grown white grapes, predominantly Grecanico (70%) sourced from several small vineyards, high on the north face of Mt Etna. The grapes were hand picked from these old vineyards during the third week of September. The average age of vines is 80 years old. The altitudes are 800-1100 metres above sea level. Soils are basalt, dark grey, sandy and rocky with a high mineral content.
The majority of the Grecanico, which includes a large part of Grecanico Dorado was macerated for one week on skins, and foot trodden several times. The rest of the grapes, which had been picked as a field blend (Carricante, Minella Bianca, Insolia) were whole bunch pressed together in a 20hl old, wooden cask. Fermentation was spontaneous without temperature control. The wine underwent malolactic fermentation and was left on fine lees for 12 months prior to bottling, without fining or filtration in December 2021.
