”A Rhabarber Schorle for adults. This is another favourite bubble for me. Full of flavour, with notes of rhubarb, bitter orange and strawberry. A fun foamy texture but with a mineral freshness.”

Winemaking

“Corvina, Rondinella and Molinara grapes fermented and aged in wood and in steel. It is then transferred to the bottles in spring, where the wine’s must, frozen in September halfway through the fermentation process, is added. Ageing then lasts for about a year in the bottles at temperatures never higher than 15°C.”

Villa Calicantus 

"The ultimate goal of Villa Calicantus is to demonstrate how Bardolino can (re) become a wine for aging if the grapes from which it derives come from suitable vineyards and if then the wine is respected in the cellar. Our vineyards are located in three very suitable areas of Bardolino, different for microclimate, soils and exposure. Each wine comes from only one of these three areas, and within these areas, each wine is assigned certain parcels. In this way, each wine will tell the intrinsic story of a vintage, in a specific vineyard, in a specific sub-area of ​​Bardolino. In the cellar nothing is added except very low doses of sulfur, it is fermented with indigenous grape yeasts, it is decanted and bottled following the lunar cycles, it is not filtered and it is not clarified.

A sparkling rosè with red orange and pompelmo notes, that will bring sun in your life like his name says (in Italian “Sollazzo” means “Enjoy the sun”)."
