'500' is Macchion dei Lupi's sparkling Trebbiano, refermented in the bottle using the ancestral method. The first production came from the 2019 vintage, when they celebrated 500 years since the death of Leonardo da Vinci – hence the name and the label. This is natural sparkling wine at its most honest and expressive.

Made from 100% Trebbiano, the grapes macerate on the skins for a few days before fermentation, giving the wine extra texture and character. The result is a cloudy, unfiltered sparkling wine with real personality – citrus, stone fruit, a touch of phenolic grip from the skin contact, and lively bubbles.

Macchion dei Lupi is located in Tuscany, where Carlo has been making biodynamic wines with minimal intervention since the beginning. His philosophy is simple: if the work in the vineyard is done well, the grapes arrive in the cellar healthy and full of vital energy that should be allowed to express itself.

All wines undergo spontaneous fermentation with only indigenous yeasts, without temperature control, and with minimal sulphites. There's no fining, filtration, or additives – just punchdowns, macerations, rackings, and creativity. The desire to create wines with a soul has driven Carlo to respect what he calls the genius of the soil and the vintage.
