Refermented in the bottle. The first production comes from the vintage 2019, when we celebrated the 500 years from the death of Leonardo da Vinci, quoted in the label. The grapes macerates on the skins for few days.

“The desire to create wines with a soul has driven me to respect as much as possible what Pitte calls the genius of the soil and the vintage.

After choosing the biodynamic method in the vineyard, I decided that I should maintain the same non-corrective approach in the cellar, based on the observation that if the work in the vineyard is done well, the grapes that arrive in the cellar are healthy, full of vital energy, and potential that should be allowed to express itself.

For this reason, our wines undergo spontaneous fermentation with only indigenous, non-selected yeasts, without temperature control, and with minimal levels of sulphites.

We do not use fining, filtration, or additives; instead, we focus on punchdowns, macerations, rackings, and creativity.“
