"The ultimate goal of Villa Calicantus is to demonstrate how Bardolino can (re) become a wine for aging if the grapes from which it derives come from suitable vineyards and if then the wine is respected in the cellar. Our vineyards are located in three very suitable areas of Bardolino, different for microclimate, soils and exposure. Each wine comes from only one of these three areas, and within these areas, each wine is assigned certain parcels. In this way, each wine will tell the intrinsic story of a vintage, in a specific vineyard, in a specific sub-area of Bardolino. In the cellar nothing is added except very low doses of sulfur, it is fermented with indigenous grape yeasts, it is decanted and bottled following the lunar cycles, it is not filtered and it is not clarified.
A unique expression of Bardolino Chiaretto that combines seasonings, minerality, complexity and drinkability in a rosé wine modern and old at the same time. The first rosé fermented and aged in barrels in the Bardolino area, Chiar’Otto changed the way of thinking about rosé in Bardolino.
The vines for Chiar ‘ Otto are located on a hill just above the village of Bardolino: they have been planted in 1966 and they are in Pergola veronese, a local trail system.
The name CHIAR ‘ OTTO comes from the italian name “CHIARA” who, along with Daniele, is the hearth of Villa Calicantus, and “OTTO”, the italian translation of number 8, that is the number of the month in which Anna, the daughter of Chiara and Daniele, born."
