Blend: Bical & Baga
This is a blend of 80% Bags and 20% Bical harvested early from assorted vineyards in Bairrada (the three “Bs” of the title). Primary fermentation with indigenous yeasts; base wine is unfined and unfiltered. Secondary fermentation via traditional method in bottle followed by nine months’ aging sur lies before disgorgement. No dosage.
The Pato name is synonyms with high quality wine in Portugal. Filipa Pato (daughter of Luis Pato) and her husband Willam Wouters are located in the region of Bairrada. They work 12 hectares biodynamically, the vines are scattered over various plots. The winemaker is very hands off, with no filtration or fining, nothing added other than small amounts of so2.
