"The ultimate goal of Villa Calicantus is to demonstrate how Bardolino can (re) become a wine for aging if the grapes from which it derives come from suitable vineyards and if then the wine is respected in the cellar. Our vineyards are located in three very suitable areas of Bardolino, different for microclimate, soils and exposure. Each wine comes from only one of these three areas, and within these areas, each wine is assigned certain parcels. In this way, each wine will tell the intrinsic story of a vintage, in a specific vineyard, in a specific sub-area of Bardolino. In the cellar nothing is added except very low doses of sulfur, it is fermented with indigenous grape yeasts, it is decanted and bottled following the lunar cycles, it is not filtered and it is not clarified.
Avresir is our Riserva, the wine that we think can change the way of thinking about Bardolino wine. It comes from our best vineyard, on one of the highest hill of the area: here the influence of the lake is combined with the influence of the Alps creating an incredible micro clima that helps the grapes to ripen. Avresir is the only Bardolino aged 2 years in barrels."
