Approachable Orange Wine - Pálava & Welschriesling Blend

Palašák is a clever blend of Pálava and Welschriesling (called "Vlašák" in Czech)—hence the playful portmanteau name. This orange wine represents a natural "return to the roots" for these two aromatic Czech varieties that fell out of favor with conventional winemaking but are now being rediscovered by natural wine producers.

The Producer

Syfany is a family estate in Vrbice, Moravia, founded in the 1990s. Working 35 hectares of estate-owned vineyards on loess and marl soils (half for their own production, half sold to local wineries), Syfany practices sustainable farming with organic methods and maintains a 1.2-hectare experimental biodynamic vineyard. Annual production: around 50,000 bottles.

Winemaking & Tasting Notes

Pálava brings beautiful aromatics while Welschriesling contributes pleasant acidity and crunch. The wine undergoes 14 days of must fermentation with selected uncrushed grapes, followed by 4 weeks of skin contact and 10 months aging in acacia-oak barrels.

This is an approachable orange wine that won't intimidate newcomers while still pleasing demanding palates. Expect aromatic complexity balanced by refreshing acidity and subtle tannic grip.

Food Pairing & Serving

Best enjoyed chilled with liver pâté, caramelized-onion bruschetta, or lighter seasonal salads featuring feta, figs, walnuts, and fresh spinach. The wine's versatility makes it perfect for adventurous food pairings.
