Full bodied, with delicate herbal notes, forest fruits and a touch of earthiness. The palate has notes of raspberry and blackberry with moderate tannins and a clean finish.
The grapes are hand picked and then fermented using only native yeasts and then aged for up to three years in small oak casks.
The story of Ronco Severo dates back to 1968 when Stefano Novello's father decided to follow his passion and restore the ancient vineyards of the counts of Rieppi. He converted the existing house into part home, part winery. Stefano went on to study enology in 1988. Despite his initial wish to forge him own path, he eventually retuned home to the family winery. All of the vines are farmed bio-dynamically and the winemaking remains non interventionist. All the wines are macerated on their skins for extended periods of time, giving increased complexity, silky texture, and body. They are all bottled unfiltered and unfined.
