100% Vermentino 

Alòs (salt in ancient Greak) is the idea of a Mediterranean wine, with the freshness and the salt of the sea. It comes from 50 year-old vineyard which grows on sandy soil, very close to the sea. The fermentation is total spontaneous and takes place in concrete vat without temperature’s control. Maceration for two days and aging for 8 months in concrete vat.

“The desire to create wines with a soul has driven me to respect as much as possible what Pitte calls the genius of the soil and the vintage.

After choosing the biodynamic method in the vineyard, I decided that I should maintain the same non-corrective approach in the cellar, based on the observation that if the work in the vineyard is done well, the grapes that arrive in the cellar are healthy, full of vital energy, and potential that should be allowed to express itself.

For this reason, our wines undergo spontaneous fermentation with only indigenous, non-selected yeasts, without temperature control, and with minimal levels of sulphites.

We do not use fining, filtration, or additives; instead, we focus on punchdowns, macerations, rackings, and creativity.“
