Zdeněk Omasta founded Bidule in 2022 with a vision to craft elegant sparkling wines from Moravia's exceptional terroir. Working 7 hectares of estate-owned vineyards on quartenary loess soils with organic farming practices (in conversion), Zdeněk produces wines that balance precision with natural exuberance.

Winemaking & Tasting Notes

Crafted using the pét-nat method, this wine is bottled while fermentation is still active, capturing natural CO₂ and preserving vibrant, youthful character. The result is elegant, juicy bubbles with nuanced complexity and refreshing precision.
