The Producer

Zdeněk Omasta founded Bidule in 2022 with a vision to craft elegant sparkling wines from Moravia's exceptional terroir. Working 7 hectares of estate-owned vineyards on quartenary loess soils with organic farming practices (in conversion), Zdeněk applies Champagne-inspired techniques to express Moravian character.

Winemaking & Tasting Notes

Crafted using the traditional method (méthode traditionnelle) and finished as Brut Nature (zero dosage), this classic blend of Chardonnay and Pinot Noir balances elegance with structure. Chardonnay brings finesse, precision, and citrus notes, while Pinot Noir adds depth, body, and red fruit complexity. The result is a refined, versatile sparkler with pure expression of fruit and terroir.
