Macchion dei Lupi 'Odyssea'

Odyssea is Macchion dei Lupi's expression of 100% Ansonica from Tuscany, Italy, showing what this indigenous grape variety can do when it's grown on sandy and volcanic soil and handled with care. Ansonica, an indigenous grape variety grown on sandy and volcanic soil, is harvested in four stages to create complexity. Fermentation and maturation occur partly in steel tanks and partly in 500-litre acacia tonneaux. A small portion of the grapes is harvested slightly overripe and vinified with a brief maceration on the skins. No fining or filtration.

Carlo says... 'The desire to create wines with a soul has driven me to respect as much as possible what Pitte calls the genius of the soil and the vintage. After choosing the biodynamic method in the vineyard, I decided that I should maintain the same non-corrective approach in the cellar, based on the observation that if the work in the vineyard is done well, the grapes that arrive in the cellar are healthy, full of vital energy, and potential that should be allowed to express itself. For this reason, our wines undergo spontaneous fermentation with only indigenous, non-selected yeasts, without temperature control, and with minimal levels of sulphites. We do not use fining, filtration, or additives; instead, we focus on punchdowns, macerations, rackings, and creativity.'
